Nestled in the chalky hills of the South Downs in Hampshire, the three classic Champagne grapes are grown, tended and harvested by hand by the Raimes family. Their first release is 2013 Blanc de Noirs; an elegant, pale gold, fresh and well balanced sparkling wine, bottle-fermented in the traditional method. With the expertise of Emma Rice and Jacob Leadley at Hattingley Winery they have produced a timeless classic that perfectly reflects the beauty of their Hampshire farm. The wine spent 24 months on the lees which lends the wine creaminess and texture. Each bottle is hand-numbered, a nice touch.
Delicious as an aperitif and very versatile to pair with food such as smoked salmon and avocado salad, chicken and creamy dishes, pine nut and goats cheese tart. A lovely accompaniment to fruit desserts such as pear compote or a heart-warming apple pie.
