It has long been a trade secret that Champagne is one of the most versatile and exciting wines to pair with food with its complex layers of flavour, taut acidity, mineral, often saline backbone and rich autolytic character. However, rarely is that message effectively conveyed to the consumer who continues to enjoy it as an aperitif, but stops short when food is served.
Hakkasan Hanway Place are bucking this trend and are firmly putting Champagne front and centre of their food pairing recommendations with the launch of ‘Cristal Dim Sum Sunday’. This extensive and mouth-watering menu has been created to enhance and accentuate the complex and concentrated flavours of Louis Roederer Cristal 2008, creating not only harmony and balance of flavour, but with each dish bringing out a different element in the wine it makes for a roller coaster ride of flavour discovery.
With dishes such as truffle chicken shumai and Fois Gras chicken roll playing to the acidity, salinity and minerality of the Cristal, while the crispy duck salad, oven baked lamb puff and sweet and sour prawns bring out the richness, depth of fruit and autolytic complexity of this multi-layered wine.
The exceptionally high standards that are imposed by the sommelier team at Hakkasan require that each wine making it onto the list is able to compliment a diverse range of flavours and cooking styles in a taste test. You can imagine the fastidious details that have gone in to creating this menu pairing. This gourmet extravaganza is just £120 per person including a cocktail each, a bottle of Louis Roederer Cristal 2008 to share and extensive sharing menu, and really does represent extraordinary value.
Cristal Dim Sum Sunday is available at Hakkasan Hanway Place from midday to 6.45pm from this Sunday onwards. Bookings on 020 7927 7000
